Homemade watermelon rind jam no pectin:

Ingredients:

  • 2 1/2 cups of watermelon peel
  • 2 cups powdered sugar
  • 5 cups of water
  • 1/2 lemon (juice of half lemon)
  • 1 tsp ground cardamom

Method:

1- The first step is to rinse the watermelon peel then peel off the tough green skin, chop up the white remains with some of the pink still on it.

2- Tip the chopped watermelon rind in a large saucepan along with 4 cups of water and bring to a simmer, let it boil for 20 minutes until the watermelon peels become tender.

3- Meanwhile, prepare the sugar syrup:
Add 1 cup of water and 2 cups of powdered sugar to a saucepan over medium-high heat. Bring the mixture to a simmer and cook, swirling the pan occasionally, until the sugar has completely dissolved. Add the juice of half medium-sized lemon, and stir on low heat until the syrup thickens.

4- Drain the watermelon rind then add it to the sugar syrup, and add 1 tsp ground cardamom. Leave it on low heat for 10 minutes.

5- Wash the jar and lid in hot, soapy water or in the dishwasher, then rinse and dry on a rack. This prevents mould forming once the jam is bottled.
