Delicious saffron curry chicken recipe:
- 450 g chicken breast (skinless, boneless, and cut into cubes)
- 2 chicken wings pieces
- 1 medium sized onion (peeled and chopped)
- 1 tbsp turmeric
- 1 tsp saffron
- 4 tbsp olive oil
How to make saffron curry chicken recipe:
1- Dissolve saffron in a little warm water and leave aside for about 30 minutes to draw out the colour and to ensure that it’s evenly distributed throughout the dish.
2- in a large pot, put oil then saute the chopped onion in the olive oil until golden, then add the turmeric and saute.
3- add the chicken pieces and stir fry for 3 minutes until the turmeric well combined with the chicken and onion.
I used two chicken wings with the chicken breast pieces to add extra flavour and richness to this recipe.
4- add 3 cups of water. Cover the pot and let the chicken boil for about 20 minutes on low heat until the chicken is fork tender.
5- now, add the saffron and salt, stir them together and leave it on a low heat for 3 minutes. Turn off the heat.
6- Serve it with white rice, tandoori naan, natural yoghurt or your favourite steam veggies.
