Easy Mini cherry cheesecakes recipe

This mini cheery cheesecake recipe is one of the easiest cheesecakes you can make. Only 30 minutes of work and a few basic ingredients.

It has 3 layers: the first layer is made from biscuit in food processor with butter and sugar, the second layer is the cream cheese layer with few other ingredients, the third layer is the cheery jam layer.

Easy mini cherry cheesecake recipe:

Ingredients:

For the first layer:

  • 15 tea biscuit ( any plain biscuit you like to use)
  • 2 tbsp Butter
  • 1 tbsp sugar

For the second layer:

  • 1 medium-sized egg (at room temperature)
  • 200 g cream cheese ( use softened, full fat cheese at room temperature)
  • 1/4 cup sugar powder
  • 2 tbsp Butter in room temperature
  • 1 tbsp vanilla (liquid or powder)

For the third layer:

  • 1/4 cup cherry jam
  • Cherry fruit

These ingredients make 9 mini cherry cheesecake pieces.

How to make an easy mini cherry cheesecakes?

1- make the first layer:

Process biscuits until resembles breadcrumbs. Add the butter and powdered sugar and process until well-combined.

Scoop out 2 tbsps of the crumbs, spoon them into a paper-lined muffin cup.

Press down on the crumbs to compact them into an even layer.

2- Prepare the cheesecake cream and bake it:

In a large bowl put the egg, cream cheese, butter, powdered sugar, and vanilla extract. Beat until smooth.

Using a spoon, divide the cheesecake fil1ling evenly into the prepared muffin pan.

Bake for 20 minutes in a preheat oven at 180°C.
Once baked, the filling should still be soft in the centre, not rock hard.
Cool thoroughly on the counter for at least 1 hour.

3- Decorate the mini cherry cheesecake:

Decorate the cheesecake pieces with cheery jam and cherry fruit, and place in the fridge for at least 6 hours to fully set, preferably overnight.

you can keep the cherry cheesecakes in the fridge for 48 hours.
