Oatmeal raisin cookies recipe:

Ingredients:

  • 2 eggs
  • 2 riped bananas
  • 2 1/2 cup Oatmeal
  • 1 cup all purpose flour
  • 1/2 cup black raisins
  • 1/2 cup sultanas
  • 1 tbsp Brown sugar
  • 1 tbsp honey
  • 1 tbsp Butter, melted at room temperature
  • 1 tbsp Baking powder
  • 1 tsp vanilla 
  • 1 tsp ground cinnamon
  • A pinch of salt

Instructions:

1- Preheat the oven to 180 degrees. In a large bowl, whisk the bananas, 2 eggs, butter, brown sugar, and the honey using an electric hand mixer.

2- Add the dry ingredients starting with the oatmeal first, then add the flour, baking powder, vanilla, cinnamon and a pinch of salt. Mix them together using a spatula.

3- Add the dried fruits and mix them using your hand until combined.

4- Roll into cookies shape and place on lined baking trays and bake in oven at 180 degrees for 15 minutes or until golden. Allow room for spreading.

Leave them to cool a little on the baking sheets then remove them to a cooling rack.

Keep these cookies in a cookie jar at room temperature for up to 2 days or store in an airtight container in the fridge for up to 5 days.

Note:
You can freeze bananas that become overripe to use later for this recipe.
