Ingredients:

2/3 cup greek style yoghurt

1 tablespoon grated ginger

2 cloves garlic, crushed

1 teaspoon chilli powder

1 tablespoon ground Coriander deeds.

1/2 teaspoon salt

2 tablespoons olive oil

750 g chicken breast, skinned & boned

Juice of 1 lemon

To Garnish:

1 onion sliced

2 tomatoes, quartered

2 green capsicum, quartered

4 lemon twists

 

Directions on how to make the best chicken tikka:

1. Mix together in a bowl all the ingredients except the chicken.

2. Cut the chicken into cubes and drop into marinade, cover and leave in the refrigerator overnight.

3. Thread the chicken and vegetables on to skewers and cook under a preheated hot grill for 5 to 6 minutes, turning frequently.

4. Remove the chicken from the skewers and arrange on individual serving plates.

Serves 4
